The instinct to boil is wrong here
When people suspect their water, they boil it. For bacteria that is sound. For
nitrate it is actively harmful.
Minnesota Department of Health: “Do not try to boil nitrate out of the water.
Boiling will make nitrate more concentrated.”
Boiling drives water off as steam. The nitrate does not leave with it — so the
same amount of nitrate ends up dissolved in less water. You have concentrated
the thing you were worried about.
Until nitrate is treated properly, the safe response is a different water
source, not a saucepan.
The number, and which unit it is in
The EPA standard is 10 milligrams of nitrate measured as nitrogen per litre.
That phrase “measured as nitrogen” matters. Laboratories report nitrate two
ways, and the standards are:

Who is at risk
Bottle-fed babies under six months old are the group Minnesota Health
identifies as being at highest risk, from methemoglobinemia — an illness that
“can result in serious illness or death.”
The risk is not limited to infants. Minnesota Health notes that “science has
emerged recently describing possible health impacts of long-term exposure to
nitrate in drinking water at concentrations below the current regulatory
standard,” with associations to “thyroid problems, adverse pregnancy
outcomes, and cancers (particularly colorectal).”
Those are stated as associations from emerging research, not settled causation.
The practical reading is that 10 mg/L is a floor rather than a target — being
under it is not the same as being in the clear.
Where it comes from, and which wells get it
Nitrate is a surface contaminant that finds its way down. Sources are
“fertilizers used on yards, golf courses, and crops,” plus “discharge from
sewage systems and animal manure.”
Wells most at risk:
- Shallow wells
- Wells in sand, karst and fractured rock aquifers
- Dug wells with casings that are not watertight
- Wells with damaged or leaking casings or fittings
The pattern is consistent: anything that shortens the path from surface to
water, or lets surface water bypass the casing. If your well is shallow, old,
or dug rather than drilled, nitrate belongs on your annual panel.
Testing
Every year. Minnesota Health also advises testing “if you planning on
becoming pregnant or if infants will be using the water” — those two triggers
sit outside the annual schedule because the risk group changes, not the water.
On treatment
Minnesota Health confirms home treatment is an option but does not name which
technologies remove nitrate, and we are not going to fill that gap from memory
on a contaminant with a health-based standard.
What we can say is what does not work: boiling. And that a
water softener is not a nitrate
treatment — it exchanges calcium and magnesium, and nitrate is not among them.
If a supplier proposes a system, ask what its nitrate reduction is certified
against and at what influent concentration. Certification claims vary by
product even within a single standard.
The bottom line
Do not boil it — boiling drives off water and leaves the nitrate behind, concentrating the thing you were worried about. Compare your result against 10 mg/L measured as nitrogen, and check which unit your lab used, because the same water reads safe or unsafe depending on the convention. Test every year, and again before a pregnancy or an infant using the water. Until treatment is in place, use a different water source rather than anything done at the stove. A softener is not a nitrate treatment and will not help.
